Tip: Cooking Fish

Cook fish fillets for 3 to 6 minutes on each side per inch of thickness. Most recipes provide a cooking time, but as a general rule, fish is done when the color turns opaque and the flesh just begins to flake when tested with a fork. Catfish is so moist that this fish is hard to overcook.
