Making pancakes at home is a lovely Sunday morning activity, but nothing is worse than flipping a pancake only to find that it has fallen flat. The trick to making fluffy pancakes can come from years of experience—or you can take the easier route and use these amazing tips from the Kitchn in order to enjoy perfectly fluffed pancakes in no time.
The main secret to fluffy pancakes, according to The Kitchn, is to separate the egg whites from the yolk. When making the better, first mix the yolk in, and then at the very end, add in the egg whites, unwhipped. This yields pancakes that are delicate on the inside, and crisp on the outside. This method is so foolproof, that The Kitchn recipe for these pancakes eventually made its way into their Kitchn Cookbook.
The Kitchn also recommends letting the batter rest for a few minutes before cooking the pancakes. This gives the flour more time to absorb the liquid, the baking soda more time to bubble, plus your pan more time to get warm.
And if you’re looking for a great pancake recipe, we recommend Alton Brown’s Instant Pancake Mix. It’s great because you can make the dry mix ahead of time, then just add the liquid ingredients at the time of baking. Because any little bit of time saved helps.
Go ahead, try it yourself. We’ll take any excuse to whip up some more pancakes.
