Foodie Friday: Harris Ranch shows how to make the perfect New York steak

BAKERSFIELD, Calif. — Harris Ranch came out to the 23ABC studios to show us how to make the perfect New York steak. They are sharing some recipes so you can get to grilling like a pro at home!

Black and Bleu Kansas City Steak
Yield: 4 steaks (4 servings)

Ingredients:
4 ea 16z Bone In New York Steaks
½ cup Harris Ranch California Cajun Spice
8 oz Point Reyes Bleu Cheese
2 Tbs Butter, unsalted

Method:
1. Season steaks liberally with the Cajun Spice, on all sides.
2. Heat a Cast Iron Skillet to very hot and add the butter.
3. Sear the steaks on both sides in the butter. About 6 minutes on each side for Medium Rare.
4. Top the steaks with the Bleu Cheese and cover the skillet for about 1 ½ minutes to melt the cheese.
5. Remove steaks from the heat and allow to rest before cutting into.

Cajun Spice Mixture
Makes about 1 quart

Ingredients:
2 cups Paprika
1 ¼ cup Salt
¾ cup Onion powder
¾ cup Garlic powder
¾ cup Cayenne pepper
½ cup Ground white pepper
1/3 cup Dried thyme
1/3 cup Dried Oregano
1/3 cup Dried Oregano
2 Bay

Method:
Mix all ingredients together

Steak Butter
Yield: 1 quart

Ingredients:
1 Tbs butter, softened
1 Tbs garlic, fresh minced
1 Tbs garlic, fresh minced
2 Tbs white wine
¼ cup parsley, fresh chopped

Method:
1. Mix all ingredients together.

Classic New York Steak and Herbed Butter
Yield: 1 serving

Ingredients:
10 ounce Prime New York Steak
1 tsp salt, kosher or sea, coarse
½ tsp black pepper, coarse
1 Tbs Harris Ranch Extra Virgin Olive Oil
½ tsp Harris Ranch Steak Butter

Method:
1. Season steak with olive oil, salt and pepper.
2. Grill to desired doneness, about 2-3 minutes on each side for Medium Rare.
3. Remove steak from grill and rub butter all over while steak rests.

New York Steak Florentine with Garlic Grilled Scampi
Yield: 1 serving

Ingredients:
14 ounce Prime New York
3 U12 Shrimp
1 Lemon, grilled
1 oz Garlic Oil
1 Tbs Harris Ranch Lemon Spice

Method:
1. Season steak and shrimp with lemon pepper, garlic oil and grill.
2. Squeeze ½ of lemon juice over shrimp.
3. Grill remaining half of lemon with salt and pepper.
