Lemon raspberry bars are the perfect treat for summer!

Sweet and refreshing dessert for a warm summer day

BAKERSFIELD, Calif. -

This week on Simply Sweet Allison we made lemon raspberry bars! These are a refreshing and light dish that is perfect for a warm summer day. Your family will not be able to resist and they are super simple to make.

 

Ingredients:

Crust-

  • 2 cups flour

  • ½ cup sugar

  • 1 cup butter, softened

Filling-

  • 4 eggs

  • 1 ½ cups sugar

  • ¼ cup flour

  • 2 lemons, zest and juiced

  • ½ cup raspberries

Directions:

  1. Preheat oven to 350 degrees.

  2. Make the crust by mixing flour, sugar and butter together until the butter is the size of peas.

  3. Pour the crust into a greased 9 x 13 pan using your knuckles to evenly distribute on the bottom of the pan.

  4. Bake for 20 minutes.

  5. Make the lemon filling by beating four eggs in a bowl.

  6. Mix in sugar, flour and lemon zest and juice until incorporated.

  7. When the crust is out of the oven, pour the mixture over the crust.

  8. Add raspberries in a row.

  9. Bake for another 20 to 25 minutes until the filling has thickened.

  10. Cut while warm to prevent cracking.
